
On Thursday, March 27, 2025, patients and residents at Parker Jewish Institute gathered for a Caribbean rice-and-beans social. The chefs – our very own residents – mixed together rice, beans, broth, coconut milk and mild spices. Then, they baked the dish to perfection. While the rice was baking, our patients/residents sipped juice and socialized, noting the flavorful aroma as the dish simmered to perfection. After 40 minutes, the nutritional midday snack – rich in essential amino acids, protein and fiber – was served and enjoyed, wrapping up an afternoon of fun.
